What's So Great About Coconut Products?

I've been meaning to post this for about two weeks now but my computer was having some difficulties. We're up and running again and here is the post; sorry for the delay :).


Coconut Flour: It is grain free and full of fiber. Low carb :). Awesome.

Coconut Oil: This is a very controversial ingredient. Most people in the mainstream medical world will tell you that it is unhealthy and full of bad fats. However, this is not true. It is very high in medium-chain fatty acids (in lauric acid especially, which is a saturated fat) that has antimicrobial and antiviral properties, and can be easily digested and turned into energy by your body. Lauric acid is one of the components of mother's milk, by the way.
The extra virgin (as seen in above photo) has a coconutty flavor. I like to use this one in desserts, smoothies, and cosmetics. The cold pressed kind doesn't have that coconutty flavor; we like to use this one for cooking.

Coconut Water (juice) and Milk: The water comes from inside the young coconuts (they are white on the outside). The milk is found in the brown coconuts or you can make your own with coconut meat. It is a vegan alternative to dairy products. It has good balancing qualities and antimicrobial properties in the gastrointestinal tract and topically.  

Coconut Sugar: How is it made? The stems, which are covered in flowers, are tapped with hollow bamboo tubes. Once collected, the sap is simmered at low temperatures for about 45 to 90 minutes. That's it. It is a 35 on the glycemix index, for those of you who are concerned, and is rich in vitamins, minerals, and it contains 16 amino acids.

This is an extremely general overview; please research it yourself to learn more.

 So, why do I love coconuts products? Well, need I say more? :)
